Heat the coconut oil in a large nonstick frying pan or wok over medium-high heat.
Add the oats, coconut oil and cumin, salt, and garlic powder and stir until fragrant.
Add water and stir gently until the oats are fully coated with the coconut milk.
Add onion and spinach and cook for 10 minutes, stirring occasionally.
Add arong and cook until the arong has wilted.
Add a little more water as needed to cover the arongs’ sides.
Add half of the coconut water and mix well.
The mixture should be thick and creamy.
Add almond milk and mix to combine.
The almond milk will make the mixture more milky.
Add spinach and mix again.
Add coconut oil to the wok.
Add tomato, onion and other vegetables and stir for about 3 minutes.
Add salt to taste.
This recipe is vegan and gluten free.
